Melt some ghee in a pan and fry the naan bread for 1/2 a minute on each side, until it the desired colour is reached. Place the naan bread on a plate and season well with salt. Spread 2 tbsp of creme fraiche on the bread Take a bowl and fill it with the prawns. Add the Bombay Sauce, fresh chives and the mango cubes and mix together. Arrange the prawns in the centre of the naan and garnish with thin rings of red onion.
